Ces bi\u00e8res belges, obtenues dans une aire g\u00e9ographique bien d\u00e9finie, sont des figures embl\u00e9matiques du style acide. Aujourd&rsquo;hui, nous allons nous pencher sur les\u00a0<em>Sour<\/em>, les bi\u00e8res acides en g\u00e9n\u00e9ral, un style plus universel car r\u00e9alisable partout dans le monde !<\/p>\n<p>Si l&rsquo;on grossit le trait, les\u00a0<em>Sour<\/em>\u00a0font partie int\u00e9grante du panorama des grands\u00a0<a href=\"https:\/\/unepetitemousse.fr\/blog\/type-de-biere\/\">types de bi\u00e8re<\/a><a href=\"http:\/\/unepetitemousse.fr\/blog\/type-de-biere\/\">s<\/a>\u00a0au m\u00eame titre que les\u00a0<strong>blondes houblonn\u00e9es, les bi\u00e8res lager, ou encore les noires torr\u00e9fi\u00e9es<\/strong>. D\u00e9routant donc, lorsqu&rsquo;on boit pour la premi\u00e8re fois une recette aussi incisive alors qu&rsquo;on s&rsquo;imaginait une Pale Ale tout ce qu&rsquo;il y a de plus classique.<\/p>\n<p><!-- \/wp:paragraph --><\/p>\n<p><!-- wp:paragraph --><\/p>\n<p>Brass\u00e9es avec des des bact\u00e9ries (de type lactique principalement) qui d\u00e9veloppent l&rsquo;acidit\u00e9, les <em>Sour<\/em> pr\u00e9sentent un taux d\u2019alcool g\u00e9n\u00e9ralement faible, et se caract\u00e9risent par leur <strong>acidit\u00e9 proche d&rsquo;un agrume qu&rsquo;on croque \u00e0 pleines dents.<\/strong> Et les brasseurs n&rsquo;h\u00e9sitent pas \u00e0 enfoncer le clou en int\u00e9grant \u00e0 ces bi\u00e8res de fermentation mixte des <a href=\"https:\/\/unepetitemousse.fr\/blog\/biere-aux-fruits\/\">baies rouges bien mordantes<\/a>, des agrumes vifs ou du fruit de la passion particuli\u00e8rement acide.<\/p>\n<p><!-- \/wp:paragraph --><\/p>\n<p><!-- wp:paragraph --><\/p>\n<p>\u00c0 noter aussi que l\u2019acidit\u00e9 peut \u00eatre cr\u00e9\u00e9e par un <a href=\"https:\/\/unepetitemousse.fr\/blog\/barley-wine\/\">vieillissement en f\u00fbt de ch\u00eane<\/a> ! Cette bi\u00e8re aux saveurs acidul\u00e9es et min\u00e9rales &#8211; qui d\u2019ailleurs,\u00a0<em>stricto sensu<\/em>, n\u2019en est pas une selon le d\u00e9cret sur la bi\u00e8re\u00a0<a href=\"https:\/\/unepetitemousse.fr\/blog\/loi-purete-allemande\/\">Reinheitsgebot<\/a> ! &#8211; voit elle aussi sa fermentation compl\u00e9t\u00e9e de bact\u00e9ries d\u00e9gageant de l\u2019acide lactique. V\u00e9ritable anc\u00eatre des bi\u00e8res acides, la Gose aurait, quelques si\u00e8cles plus tard, inspir\u00e9 le nom et la recette de la Gueuze chez les voisins belges&#8230;<\/p>\n<p>En bonnes Sours dignes de ce nom, les Goses pr\u00e9sentent un\u00a0<a href=\"https:\/\/unepetitemousse.fr\/blog\/ibu-acronymes-de-la-biere\/\">ABV<\/a>\u00a0bas, un malt g\u00e9n\u00e9reux en bl\u00e9 et une faible amertume. Jusque l\u00e0, nous direz-vous, rien de r\u00e9volutionnaire par rapport \u00e0 une\u00a0<em>Sour<\/em>\u00a0quelconque&#8230; Car ce qui fait toute la diff\u00e9rence, c&rsquo;est l&rsquo;<strong>ajout de graines de coriandre et de cristaux de sel\u00a0<\/strong>\u00e0 la recette ! Un petit twist salon qui donne un vrai coup de fouet et une toute nouvelle dimension \u00e0 la bi\u00e8re&#8230;<\/p>\n<p>Cela peut \u00eatre un petit peu perturbant au d\u00e9but, mais l&rsquo;on y prend vite go\u00fbt ! Notre brasseur adore ce type de recettes, et\u00a0<strong>son interpr\u00e9tation au sel rose de l&rsquo;Himalaya<\/strong>\u00a0a valu \u00e0 notre\u00a0<a href=\"https:\/\/unepetitemousse.fr\/blog\/biere-blanche-francaise\/\">Citra Gose Alactique<\/a>\u00a0<strong>plusieurs m\u00e9dailles<\/strong>\u00a0! Gr\u00e2ce au froment que contient son malt, elle pr\u00e9sente une robe d\u2019un <strong>tr\u00e8s beau corps trouble <\/strong>et presque jaune, une forte p\u00e9tillance, et surtout <strong>une acidit\u00e9 d\u00e9frisante !<\/strong><\/p>\n<p><!-- \/wp:paragraph --><\/p>\n<p><!-- wp:paragraph --><\/p>\n<p>Les responsables de cette particularit\u00e9 sont encore les bact\u00e9ries lactiques. <strong>En se d\u00e9veloppant, elles vont produire de l&rsquo;acide lactique qui va acidifier la bi\u00e8re. <\/strong>Comme dans le lambic en quelque sorte, mais \u00e0 la diff\u00e9rence que<strong> la main du brasseur intervient personnellement dans cette \u00e9tape !<\/strong><\/p>\n<p><!-- \/wp:paragraph --><\/p>\n<p><!-- wp:paragraph --><\/p>\n<p>Malgr\u00e9 sa simplicit\u00e9 aromatique d\u00e9concertante, la Berliner Weisse ne manque pas d&rsquo;adeptes, surtout en p\u00e9riode estivale. La raison de ce succ\u00e8s est li\u00e9e \u00e0 sa vive acidit\u00e9 citronn\u00e9e qui en fait <strong>l&rsquo;une des bi\u00e8res les plus rafraichissantes qui soient<\/strong> ! De plus, elle se pr\u00eate bien au brassage de <a href=\"https:\/\/unepetitemousse.fr\/blog\/biere-aux-fruits\/\">bi\u00e8res aux fruits<\/a>, pour des r\u00e9sultats hyper gourmands et
