Aux oreilles d&rsquo;un amateur de bi\u00e8re confirm\u00e9e,<strong> c&rsquo;est en un peu une h\u00e9r\u00e9sie<\/strong>&#8230; Et oui,\u00a0<strong>les bi\u00e8res blanches, ou bi\u00e8res de bl\u00e9 forment tout sauf une famille homog\u00e8ne<\/strong>, et nous avons tort de les lier par leur couleur (qui plus est, tire plut\u00f4t vers le jaune paille). Non, c&rsquo;est la c\u00e9r\u00e9ale utilis\u00e9e pour la brasser ! Une bi\u00e8re dite blanche est une bi\u00e8re <strong>brass\u00e9e avec une certaine quantit\u00e9 de bl\u00e9<\/strong>, voil\u00e0 tout !<\/p>\n<p><!-- \/wp:paragraph --><\/p>\n<p><!-- wp:paragraph --><\/p>\n<p>Plus pr\u00e9cis\u00e9ment, pour \u00eatre d\u00e9cr\u00e9t\u00e9e \u00ab\u00a0blanche\u00a0\u00bb<strong>, <\/strong>la bi\u00e8re doit contenir <strong>une part de bl\u00e9 minimale<\/strong> dans son malt. Cette proportion diff\u00e8re en fonction de la r\u00e8glementation des pays :\u00a0<\/p>\n<ul>\n<li><span style=\"font-size: 16px;\">30% minimum en France<\/span><\/li>\n<li><span style=\"font-size: blanche<\/strong>, c&rsquo;est parce que cette d\u00e9nomination regroupe en r\u00e9alit\u00e9 plusieurs types de bi\u00e8re. 3 principaux, pour \u00eatre pr\u00e9cis.<\/p>\n<p>De la m\u00eame mani\u00e8re qu<strong>&lsquo;une bi\u00e8re noire peut faire r\u00e9f\u00e9rence \u00e0 un Stout, une Porter ou une Black IPA<\/strong>, parler de la couleur de la robe de votre bi\u00e8re n&rsquo;est donc pas la fa\u00e7on la plus pertinente de d\u00e9finir le style de petite mousse que vous appr\u00e9cier.\u00a0<\/p>\n<p>Nous allons donc\u00a0<strong>nous pencher sur les bi\u00e8res au malt de froment les plus connues,<\/strong>\u00a0et pourquoi une erreur de traduction est \u00e0 l&rsquo;origine de la confusion&#8230;<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div bi\u00e8re blanche, il y beaucoup de chance pour que l&rsquo;on vous serve<strong> une Witbier ou une Hefeweizen. <\/strong>Ce sont les 2 grandes types de blanches que l&rsquo;on brasse et que l&rsquo;on boit, et ils nous viennent respectivement de Belgique et d&rsquo;Allemagne.<\/p>\n<p><!-- \/wp:paragraph --><\/p>\n<p><!-- wp:paragraph --><\/p>\n<p><strong>La confusion entre les styles<\/strong> (et l&rsquo;apparition du terme \u00ab\u00a0blanche\u00a0\u00bb pour les nommer toutes) viendrait d&rsquo;une mauvaise traduction de l&rsquo;allemand&#8230;\u00a0<\/p>\n<p>En effet, Weizenbier signifie \u00ab\u00a0bi\u00e8re de bl\u00e9\u00a0\u00bb, mais sonne assez proche de \u00ab\u00a0Weissbier\u00a0\u00bb qui l\u00e0 veut bien dire \u00ab\u00a0bi\u00e8re blanche\u00a0\u00bb. <strong>Une sonorit\u00e9 proche, <\/strong>qui a achev\u00e9 de m\u00ealer pour toujours couleur et c\u00e9r\u00e9ale dans l&rsquo;imaginaire BI\u00c8RE BLANCHE ALLEMANDE<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-53284d8 elementor-widget elementor-widget-text-editor\" data-id=\"53284d8\" des bi\u00e8res de fermentation haute, brass\u00e9es \u00e0 partir de <strong>bl\u00e9 tendre ou froment<\/strong> (50% au moins). Elles tournent g\u00e9n\u00e9ralement <strong>autour de 5% ABV<\/strong>, avec une amertume faiblement marqu\u00e9e.<\/p>\n<p>On sent surtout les flaveurs craquantes de la c\u00e9r\u00e9ale lors de la d\u00e9gustation, mais aussi le<strong> parfum dominant de la banane et du clou de girofle<\/strong>, dont les esther sont tr\u00e8s pr\u00e9sents dans les bi\u00e8res levur\u00e9es comme celles-ci.<\/p>\n<p>Comme nous le disions, une Weizen n&rsquo;est pas forc\u00e9ment blanche, loin de l\u00e0 !
