Vol direct pour la Scandinavie, terre de vikings assoiff\u00e9s de <a href=\"https:\/\/unepetitemousse.fr\/blog\/type-de-biere\/\" target=\"_blank\" rel=\"noopener\">bi\u00e8res<\/a> qui pourtant ne brille pas particuli\u00e8rement en terme d&rsquo;h\u00e9ritage et de patrimoine brassicole. Du moins, c&rsquo;est c<strong>e qu&rsquo;on peut penser \u00e0 tort<\/strong> !\u00a0<\/p><p>Si beaucoup de brasseries artisanales archi reconnues aujourd&rsquo;hui sont <a href=\"https:\/\/www.visitnorway.fr\/activites-norvege\/gastronomie\/biere-artisanale\/\" target=\"_blank\" rel=\"noopener\">scandinaves<\/a> (To \u00d8l, Lervig, N\u00f8gne \u00d8, \u00c6gir, Beerbliotek, Mikkeller, Brekeriet&#8230;), cela montre bien que d&rsquo;Islande au Danemark en passant par la Su\u00e8de et la Norv\u00e8ge, <strong>on sait de quoi on parle dans les pays nordiques<\/strong>.\u00a0<\/p><p>Et c&rsquo;est pr\u00e9cis\u00e9ment le Pays du soleil de minuit qui nous int\u00e9resse aujourd&rsquo;hui, et plus pr\u00e9cis\u00e9ment <strong>la ville de Voss<\/strong>&#8230;<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-849c439 elementor-widget elementor-widget-heading\" data-id=\"849c439\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Bi\u00e8res norv\u00e9giennes : alors, c'est qui le Voss ?<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-a33b923 elementor-widget elementor-widget-text-editor\" data-id=\"a33b923\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>Voss<\/strong> est une ville du comt\u00e9 de Vestland, sur la c\u00f4te ouest de la Norv\u00e8ge, pr\u00e8s de Bergen, <strong>dans les Fjords<\/strong>. Connue pour \u00eatre la capitale norv\u00e9gienne du sport et de la nature, c&rsquo;est aussi la ville qui a vu na\u00eetre la levure \u00e9ponyme qui nous int\u00e9resse aujourd&rsquo;hui.<\/p><p>Comme Bruxelles et sa levure <strong>end\u00e9mique<\/strong> qui implique de ne brasser des Lambic que dans la r\u00e9gion de la capitale belge, il existe une <strong>souche ancienne de levures<\/strong> Saccharomyces Cerevisiae uniques \u00e0 la Norv\u00e8ge. C&rsquo;est de l\u00e0 que viennent nos ch\u00e8res bi\u00e8res et levures Kveik !<\/p><p>Une l\u00e9gende finlandaise veut qu&rsquo;elles soient produites <strong>\u00e0 partir de bave de sanglier<\/strong>&#8230; Charmant non ? \u00c0 la fa\u00e7on d&rsquo;un levain fait-maison, de grains de k\u00e9fir ou d&rsquo;une m\u00e8re de <a href=\"https:\/\/unepetitemousse.fr\/blog\/kombucha-fermentation\/\" target=\"_blank\" rel=\"noopener\">kombucha<\/a>, elles se passent de mains en mains dans les foyers.<\/p><p>Aussi nomm\u00e9es Vossa\u00f8l, les bi\u00e8res originaires de Voss font partie de la grande cat\u00e9gorie des Malt\u00f8l : des <strong>bi\u00e8res fermi\u00e8res norv\u00e9giennes de fermentation haute<\/strong>. On y retrouve aussi les Korn\u00f8l (bi\u00e8re de c\u00e9r\u00e9ales, litt\u00e9ralement) et les Stjordals\u00f8l (bi\u00e8re de Stordjal). Elle apporte des <strong>saveurs d&rsquo;\u00e9corces d&rsquo;oranges un peu confites<\/strong> (et d&rsquo;agrumes en g\u00e9n\u00e9ral) \u00e0 la bi\u00e8re en question, m\u00eame si <strong>son profil aromatique est principalement neutre<\/strong>.<\/p><p>La levure s\u00e8che <em><a href=\"https:\/\/www.lallemandbrewing.com\/fr\/continental-europe\/details-du-produit\/levure-ale-lalbrew-voss-kveik\/\" target=\"_blank\" rel=\"noopener\">LalBrew\u00aeVoss\u00a0Kveik Lallemand<\/a>\u00a0<\/em>est<strong> la plus reconnue et pl\u00e9biscit\u00e9e<\/strong> parmi les professionnels qui veulent brasser une bi\u00e8re du genre. Mais tout le monde ne brasse pas une bi\u00e8re traditionnelle Voss avec ! <strong>Les brasseurs artisanaux s&rsquo;en sont empar\u00e9e<\/strong>\u00a0pour r\u00e9aliser de savoureuses Kveik IPA, Kveik Pale Ale ou encore Session Kveik.<\/p><p>Ce qu&rsquo;il faut savoir, c&rsquo;est qu&rsquo;en norv\u00e9gien, <strong>kveik veut litt\u00e9ralement dire levure<\/strong>. \u00c0 l&rsquo;instar du th\u00e9 chai tr\u00e8s redondant (chai signifiant th\u00e9 en indien&#8230;), on a donc ici un double emploi bien \u00e9tabli dans le language courant.\u00a0<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-68ab983 elementor-blockquote--skin-border elementor-widget elementor-widget-blockquote\" data-id=\"68ab983\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"blockquote.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t<blockquote class=\"elementor-blockquote\">\n\t\t\t<p class=\"elementor-blockquote__content\">\n\t\t\t\tLe mot a pour origine kvikk, vieux terme nordique signifiant quelque chose de vif, vigoureux, sain, rapide. Impressionnant, quand on sait que les <\/span><a style=\"font-size: 16px; background-color: #ffffff;\" href=\"https:\/\/unepetitemousse.fr\/blog\/ale-biere-explication-du-style\/\" target=\"_blank\" rel=\"noopener\">Ales<\/a><span style=\"font-size: 16px;\"> (fermentation haute donc) oscillent entre 18\u00b0 et 22\u00b0&#8230;<\/span><\/p><p>Notons aussi qu&rsquo;elles ont une floculation \u00e9lev\u00e9e, ce qui signifie qu&rsquo;elles s&rsquo;agglom\u00e8rent de fa\u00e7on compacte, et sont donc <strong>plus faciles \u00e0 r\u00e9cup\u00e9rer en fond de cuve<\/strong> \u00e0 la fin du brassage.
